I have a singh coworker who brought dhokla to work with green chutney (like salsa without tomatoes but mint, cilantro, onions, lemon juice, sugar to taste, ginger juice) She used an aluminium double boiler/steamer. The bottom pan (boiler) which you filled with hot water and the second pan above the boiler is a steamer pan with holes for the steam to cook the dish and with a cover to trap the steam from escaping. I think that Americans tend to deem food from other countries as "ethnic" if they are cultures that don't have a big presence here necessarily. I mean I don't hear anyone referring to Mexican food as ethnic, yet if it's Peruvian it's "ethnic." And, it seems to be only 3rd world countries' foods that we consider to be "ethnic."We don't consider our own food "ethnic" but I wonder if a hamburger or hot dog would be called "ethnic" in other countries? American food isn't called ethnic because american is a nationality not an ethnicity and because mcdonalds has made it popular all over the world. Shon Almquist: I've had this once before and I really loved it. I don't remember much about the chutney's. I know one (white) had coconut. The other was green and I can't remember anything else about it; taste, texture; only that it was green.
